Keynote Address: Baking a Difference

We are thrilled to welcome Jaime Lehman, Executive Director of the nonprofit For Goodness Cakes, as our opening keynote speaker. Jaime is here to share the story of For Goodness Cakes, which she started in 2016 after delivering birthday cakes to her local foster youth agency. Since then, For Goodness Cakes has opened 18 chapters all across the United States. Today, Jaime and her volunteers (a.k.a. her Sprinkle Army) make and hand-deliver birthday and graduation cakes to at-promise youth and children in foster care, many of whom have never known the joy of receiving a celebratory cake. Jaime’s story is nothing short of inspirational—and it reminds us that baking for others can be the biggest act of love.

Jaime is the Founder and Executive Director of For Goodness Cakes, a nonprofit whose volunteers have baked and delivered over 32,000 celebration cakes to at-promise youth and young adults in 29 regions across the US since 2016. Jaime believes in the transformative power of baking for others, and that’s why she and her volunteers continue spreading love, joy (and frosting) with their special cake deliveries.

The Science of Chocolate Chip Cookies

The more you know, the more you can do—and when it comes to chocolate chip cookies, there’s more to their deliciousness than meets the eye. Erika will teach you the science behind baking chocolate chip cookies, including how to get your desired cookie texture (thick or thin, gooey or crisp!), how to tweak the flavor of your cookie, why temperature matters, and how to choose the right chocolate.
Erika is the creator and recipe tester behind The Pancake Princess, a baking blog curating popular internet recipes via monthly bake offs. The bake offs, which have been running since 2017, include testing 9-12 different recipes in one day, gathering taster feedback and analyzing the data to find the crowd favorite. Based in New York City, Erika recently transitioned from a product marketing manager at a software company to a full-time content creator.

Nika Spencer runs a home bakery called A Whisk Worth Tasting, based in Lafayette Hill, PA. The bakery has been licensed by the PA Department of Agriculture since January 2021 and is well-known for creating beautiful custom cakes for all occasions. Since opening to the public, A Whisk Worth Tasting now boasts a steady repeat client base with bookings on schedule two years in advance.

 

Nika is a self-taught baker & custom cake decorator with commercial bakery experience. She also teaches cupcake and cake decorating classes throughout the Philly suburbs. Nika has been baking since childhood; she started decorating cakes after making her daughter’s first birthday cake five years ago.

Avalon found her love for art at a young age, but it wasn’t until she began her first job at fifteen that she found her love for baking. Ever since she entered the sweet side of the food industry, she has been challenging herself to go above and beyond. Her passion lies in presenting cake in a form only formally reserved for traditional sculpture, brush, and paper. She found her “happy place” bringing both art forms together. Avalon learned how to create cakes and sugar art through experience and experimentation. Whether it’s realistic busts, defying gravity, delicate flowers, or making colorful watercolor paintings, most of all, she enjoys sharing her findings and teaching others. Macarons are tricky business, but don’t worry – Justine Defiesta of Confections ByJ is here to help! In her macaron class, Justine will teach you her tips for “troubleshooting” macarons, or resolving the various problems that can happen when you’re baking these delicious French treats (like hollow shells & sticky bottoms). Specifically, you’ll learn the role of each ingredient of a French macaron, how to get to know your oven, how to handle environmental factors that effect macarons, the best equipment to prevent macaron errors, and the do’s and dont’s of troubleshooting macarons. Justine Defiesta is the owner of Confections By J. In 2020, Justine started Confections By J to share her love and passion for baking macarons. Since then, she has continued on her baking journey and has become known for her macaron patterns, or as she calls it, “macterns,” and the “Mackrispies,” which are macaron Rice Krispies made from extra macarons shells. While working on growing her business, Justine has continued to share her knowledge, troubleshooting macarons and giving tips and tricks on social media, including creative flavoring and food styling ideas.

3-D Harvest Napkin Ring Cookies (Part 1)

Looking for a true show-stopper to bring to the table this holiday season? Don’t miss this exciting two-part, hands-on class with world-renowned sugar artist and 3-D cookie maker, Julia Usher! Julia will show you step-by-step how to elevate your fall and winter holiday tables with an unexpected cookie that doubles as a festive napkin ring.

 

Broken up into two parts with one class on each day of The Bake Fest, Julia’s lesson will teach you exactly how to make one or more napkin ring cookies. Along the way, you’ll gain experience with a host of innovative cookie decorating techniques that work beautifully on just about any cookie project. Those techniques include contoured and embossed cookies, contoured and airbrushed royal icing transfers (for the leaves), sculpted royal icing putty (for the berries), piped dimensional royal icing (for the pine cones), stamped fondant appliqués, sponging, spackling, piped beadwork, gilded modeling chocolate bows, and 3-D assembly.

 

While Julia will demonstrate the harvest-themed napkin ring shown in her class photo, she will also suggest other seasonal styling variations along the way. NOTE: On class day one, cookies will be shaped and baked, and long lead-time items that require icing drying time will be made. If you intend to follow along with Julia in class, you shouldn’t miss this first part. On class day two, the elements made on day one will be further embellished and then assembled into these spectacular, tasty, and functional treats!

Julia M. Usher is a world-renowned sugar artist most recognized for her pioneering work in 3-D cookies. She’s authored over 15 books and ebooks, manages the prominent Cookie Connection™ online community, sells her own line of cookie products, and travels the world teaching cookie decorating. Avalon Yarnes owns Avalon Cakes School of Sugar Art, an online platform for cake and sugar art enthusiasts to learn and explore. She’s also the woman behind The Cake and Cookie Planner, an award-winning line of products for planning and sketching cakes and cookies. She has had the honor of being awarded Best Novelty Cakes Artist and one of the Top 10 Cake Artists of North America. Avalon found her love for art at a young age, but it wasn’t until she began her first job at fifteen that she found her love for baking. Ever since she entered the sweet side of the food industry, she has been challenging herself to go above and beyond. Her passion lies in presenting cake in a form only formally reserved for traditional sculpture, brush, and paper. She found her “happy place” bringing both art forms together. Avalon learned how to create cakes and sugar art through experience and experimentation. Whether it’s realistic busts, defying gravity, delicate flowers, or making colorful watercolor paintings, most of all, she enjoys sharing her findings and teaching others. You can also find her on television shows like Food Network Challenge and Duff Till Dawn. Her work can be found featured in top bakery blogs, magazines and books.

The podcast, hosted by Gemma Stafford and Ami Shukla, Gemma’s culinary director, offers insights into the baking world and baking entrepreneurship. The holidays will be here before we know it, and in Susan Trianos’s super-informative decorating class, you’ll learn how to decorate the MOST cheerful Christmas cake—though you can apply your learnings to any holiday! Susan has been a baker and decorator for more than 35 years. She went on to own a renowned Toronto custom cake shop, worked for Wilton Industries-Pillsbury, and taught at a confectionary arts college. Susan now focuses her efforts on teaching and judging competitions, and selling products she believes in.

Looking for a true show-stopper to bring to the table this holiday season? Don’t miss this exciting two-part, hands-on class with world-renowned sugar artist and 3-D cookie maker, Julia Usher! Julia will show you step-by-step how to elevate your fall and winter holiday tables with an unexpected cookie that doubles as a festive napkin ring.

 

Broken up into two parts with one class on each day of The Bake Fest, Julia’s lesson will teach you exactly how to make one or more napkin ring cookies. Along the way, you’ll gain experience with a host of innovative cookie decorating techniques that work beautifully on just about any cookie project. Those techniques include contoured and embossed cookies, contoured and airbrushed royal icing transfers (for the leaves), sculpted royal icing putty (for the berries), piped dimensional royal icing (for the pine cones), stamped fondant appliqués, sponging, spackling, piped beadwork, gilded modeling chocolate bows, and 3-D assembly.

 

While Julia will demonstrate the harvest-themed napkin ring shown in her class photo, she will also suggest other seasonal styling variations along the way. NOTE: On class day one, cookies will be shaped and baked, and long lead-time items that require icing drying time will be made. If you intend to follow along with Julia in class, you shouldn’t miss this first part. On class day two, the elements made on day one will be further embellished and then assembled into these spectacular, tasty, and functional treats!

In her inspiring keynote address, acclaimed baker, cookbook author and blogger Rose Beranbaum, the pioneer of the reverse creaming technique of cake making, will share the story of how she found her way to baking, her greatest inspirations and her career as a journalist, writer, and of course, as a baker. Along the way, you’ll learn how to find your path, trust your journey and follow your dream.

Accomplished baker, cookbook author, and blogger Rose Beranbaum is known as the pioneer of the reverse creaming technique of cake-making—and her career has inspired millions of hobby and home bakers to pursue and perfect their craft. Rose has published fourteen books and a laminated pie booklet; Romantic & Classic Cakes (1981) was the cornerstone for her subsequent book, The Cake Bible (1988), which was inducted into the International Association of Culinary Professionals Culinary Classics and is now in its 60th printing. The Cake Bible 35th Anniversary Edition (fully revised and updated) will be published soon, on October 22nd, 2024. Rose is a three-time James Beard Award winner for her first book, The Cake Bible in both Baking and Desserts, and Book of the Year, 1989, and for Rose’s Christmas Cookies, Baking and Desserts, 1991.
