The Power of "Baketivism"

We are thrilled to welcome keynote speaker Rose McGee to The Bake Fest! Acclaimed baker, social activist, author and beloved “Pie Lady” Rose McGee is here to share her inspiring journey in her keynote address, The Power of “Baketivism.” Though she’s known for her incredible sweet potato pies, Rose’s story is all about recognizing your heart’s deepest desires and living a purposeful life. For Rose, baking was a vehicle for unity; after the shooting death of Michael Brown in 2014, Rose was suddenly inspired to bake pies and bring them to Ferguson. Since then, McGee has shared over 4,000 pies with members of her local community in St. Paul & Minneapolis. Her work recently earned her a 2023 Facing Race Award from the St. Paul & Minneapolis Foundation, a recognition that honors anti-racism advocates for making Minnesota a place where everyone can thrive.
Rose McGee is President and Founder of Sweet Potato Comfort Pie: A Catalyst for Caring and Building Community. She is author of the newly-released children’s book “Can’t Nobody Make a Sweet Potato Pie Like Our Mama.” Rose’s “baketivisim” approach has earned her recognition as Citizen of the Year in her community of Golden Valley, Minnesota (where she resides), one of Minnesota’s 50 Over 50, a Facing Race Awardee, the prestigious Bush Fellowship, Black Collectives Fellowship, the University of Minnesota Hub Residency Fellowship, and more. She has been featured on the national PBS series, “A Few Good Pie Places,” has a TEDx Talk on “The Power of Pie”, was recognized on the Rachel Ray Show for her unique ability to make pie a social justice food item, was featured on NBC Nightly News, and appeared on Al Roker’s Family Style. She was selected by the Japanese Press as one of 50 Stories in the World doing positive things during COVID.

Lauren is a graphic designer-turned-cookier who is obsessed with creating more joy in life and in the kitchen. She decorated her first cookie when she was going through the hardest years of her life. After having a baby with a serious medical condition, her life changed in an instant. Eventually, she found some stability, and decided to bring something into her life that was just for her: cookie decorating!

 

After successfully growing her own home bakery, she took her business online in 2020 and began reaching cookie class-goers worldwide. While expanding her class repertoire, she applied her natural creative tendencies to create courses, cookie recipes, and decorating classes that have taught over 50K bakers how to decorate sugar cookies like a pro.

The Science of Cookies

Join Tammy Brennan, owner of Tammy’s Cookie Company in Vancouver, Washington, as she spills her secrets for show-stopping (and drool-worthy) cookies worthy of any kitchen table or bakery case.

 

Tammy’s class will focus on the science of baking, with a special emphasis on cookies. She’ll review the role of ingredients in cookie and baking, butter knowledge (both creamed and browned), how to improve consistency of your bakes, how to create a cookie with a soft inside and a crispy outside, and how to stuff and finish a cookie so they’re picture-perfect!

Tammy Brennan owns Tammy’s Cookie Company in Vancouver, Washington. She is a self-taught baker who specializes in artisanal bakery-style cookies. Tammy creates her own recipes and is known for her signature browned butter cookie dough. She also makes her own fillings and toppings for her cookies.

 

Within the last year, Tammy has developed a fast-growing Instagram account. Her passion for the science behind baking has established her as one of the go-to cookie experts on social media.

3D Spring Topiary Cookie (Part 1)

Decorators of all skill levels are encouraged to join Julia in this two-part, hands-on session! World-renowned sugar artist Julia Usher will show you how to make a delightful 3-D topiary cookie set on a lifelike brick patio (which is also a cookie!). This project is perfect for bridal shower and springtime garden party favors, or centerpieces when arranged en masse. Along the way, you’ll get lots of practice with several cookie decorating and construction techniques, including contoured and embossed cookies, dipping, sponging, royal icing roses, wafer paper bows and embellishments, piping on contoured cookies, 3-D sandwiching and multi-level assembly, spackling, and various cookie crumb effects.

 

NOTE: This class spans two sessions. On Day One, long lead-time items that require icing drying time will be made; on Day Two, finishing touches will be added, and the project parts will magically come together with Julia’s expert guidance.

Learn the art of artisan sourdough from The Sourdough Baker herself, Caitlin Vincent! Caitlin’s class will be taught in the reverse order of making sourdough in order to demonstrate each method with as many visual cues as possible.

 

Participants will learn how to properly score a loaf of sourdough for the perfect ear, ways to shape a sourdough boule and incorporate inclusions, what to look for in regards to bulk fermentation completion, sourdough gluten-development techniques including kneading sourdough in a stand mixer, and the effects of autolyse on bread dough.

In Lucie’s fun and informative class, you’ll learn all about the basics of 3D printing—where 3D printing came from, what can be printed, and how it all works. Then, you’ll dive into the technical side of 3D printing, so you leave with enough knowledge to explore it on your own. Perhaps most valuable, Lucie will share what NOT to do when you’re 3D printing, so you can avoid common pitfalls and just have fun.

Lucie Bakes is a professional Graphic Designer turned Sugar Artist, and now the owner of a home-based 3D-printed-cookie-cutter business! Lucie got her first Creality Ender 3D printer for Christmas in 2018 from her husband, Spencer, an engineer who regularly works with 3D software, CNC routers and laser-cutting tools. She was confident that if anyone could figure out which printer was the best (and most cost-effective) for her needs, he was the one who could do it. Just in time for wedding season, learn to color pie dough and create beautiful (but easy!) floral pies. OG Pie Artist Jessica Leigh Clark-Bojin will show you how to achieve vibrant, enticing pops of color in this fun, hands-on class!

 

Grab your apron, tools and ingredients, because in this Jessica’s class, you will bake along with Jessica and assemble your own colourful floral pie at home. You’ll learn the do’s and don’ts of mixing different types of pigment with pastry dough; how to incorporate different flavoring for an extra layer of sophistication and delight; and how to use fondant plunger cutters, cookie cutters, and other typical food-safe household items to fashion beautiful flowers from pie pastry quickly and easily.

 

At the end, you’ll have the chance to ask all your Pie Art questions during the Pie Art Q&A with Jessica, so that you feel confident putting your own personal spin on the techniques you just learned. Don’t miss it!
