Unless noted, every class is a full 2 hours of hands-on instruction with expert bakers. These are deep dives – not quick overviews. You’ll also find 15-minute brand demos throughout the weekend that showcase tools and products bakers love.

Keynote Address: Say Yes, Then Figure it Out

This year’s keynote comes from someone whose resume reads like baking royalty. Gale Gand – yes, the one who worked alongside Julia Child – has built a career by saying yes to opportunities long before she had everything figured out.

 

Whether she was co-authoring cookbooks, hosting her own Food Network show, or making peach cobbler for Aretha Franklin, Gale leaned into the unknown and made it work.

 

In this keynote, she shares why embracing the unfamiliar can change everything – from your business to your life. If you’ve ever held back from trying something new until you felt more “ready,” Gale’s story will challenge you to take the leap anyway.
No matter what kind of business you run or what dream you’re building this talk is your reminder that bold moves don’t start with having a plan. They start with saying yes.

Gale Gand is a pastry chef and had the Michelin two-star restaurant, Tru, in Chicago. She hosted Food Network’s show “Sweet Dreams”, has written 8 cookbooks, and worked with Julia Child on her book and PBS series, “Baking with Julia”. Gale teaches cooking classes, has an artisanal root beer company, and has 2 James Beard Awards. She is a professional Pie and Food Competition Judge. In 2022 she cooked in Poland and Ukraine with Jose Andres’ World Central Kitchen. She is the mother of 3, has a BFA from RIT in Metalsmithing, and plays the ukulele. Fun fact: She once made a Peach Cobbler for Aretha Franklin.

Demystifying Leavening: The Science of Rise

Join chef instructor Kristin “Baker Bettie” Hoffman for a deep dive into the fascinating world of leavening. From light-as-air muffins to crusty artisan loaves, leavening is what gives baked goods their beautiful rise. In this session, you’ll explore the science behind how it all works, from yeast and baking powder to whipped egg whites. We’ll cover the three main types of leavening (biological, chemical, and physical), the science of how ingredients interact with various leavening agents to create lift, the role temperature, time, and moisture play in successful leavening, and common issues and how to troubleshoot flat or dense bakes. There will be multiple demos to see leavening in action.

Kristin “Baker Bettie” Hoffman is a trained chef, baking educator, cookbook author, and owner of Bettie’s Chicago, a 1950’s styled event space and recreational baking school in downtown Chicago. Since 2011, she has created educational content about baking on the Baker Bettie website, YouTube channel, and on social media! Kristin specializes in teaching fundamental baking techniques, basic bread baking, and sourdough. Her approach is to break down baking science in an approachable way to help bakers build their confidence in the kitchen.

Bakery-Style Apple Spice Cream Puffs

You’ll master core pastry recipes like pâte à choux and caramel, with tips to spice them up for festive gatherings. We’ll demystify caramel by breaking down the science behind it, guide you to the perfect puff with the right pâte à choux texture, and show you a unique twist on Chantilly cream – infused with rich, golden caramel.
Molly Wilkinson is a pastry chef living in Versailles, France. Originally from Dallas, Texas, Molly moved to Paris in 2013 to follow her passion and study pastry at Le Cordon Bleu in Paris. After working at several bakeries both​ in France and the US, she now teaches pastry from of her 18th century apartment and on Zoom! In 2021, Molly released a cookbook called French Pastry Made Simple, and she is currently working on her second book. Her method is all about making French pastry easy by breaking down recipes and showing you lots of tips and tricks to help any baker achieve extraordinary results.

Heather Farmer is the creator behind the baking blog Boston Girl Bakes, where she shares approachable, from-scratch dessert recipes for home bakers. She’s a three-time cookbook author, with The Beginner’s Baking Bible as her debut title. Heather specializes in helping beginner bakers gain confidence in the kitchen – especially when it comes to crowd-pleasing classics like cheesecake and how to master a perfect graham cracker crust, set up a water bath that doesn’t leak, and how to prevent cracks. She lives just outside Boston with her husband and two children.

Chef Danielle Sepsy is the founder & creator of The Hungry Gnome, a Long Island City-based wholesale bakery that sells baked goods to more than 300 wholesale accounts, from New York favorites like Joe Coffee and Birch Coffee to 35,000 feet in the sky with JetBlue. She also ships her baked goods directly to consumer via thehungrygnome.com.

Danielle is known as “The Scone Queen” by her fans, who she affectionately calls her “Gnomies.” Her buttery scones, biscuits, muffins, chocolate chip cookies, and Nutella banana bread have received praise from celebrities including Drew Barrymore, Dan Levy, Amy Schumer, and Whoopi Goldberg.

Danielle was a finalist and fan favorite on Max’s “The Big Brunch,” a cooking competition show meets docu-series produced and hosted by Dan Levy. On social media, Danielle is known for her unique approach to cooking and baking which she refers to as “innovative nostalgia.” She takes the classics we know and love and puts an elevated spin on them. In her content she regularly features dishes from her Italian American culture, mouth-watering baked goods, and even funny moments with her very close-knit Long Island, Italian family.

One Dough, Endless Cookies

Take your cookies from predictable to unforgettable. In this idea-packed, demonstration-style class, Tammy shows you how to transform one base cookie dough into an endless variety of flavor bombs. She’ll demo her signature caramel and marshmallow fluff for stuffing or drizzling, and walk you through creative ways to top, stuff, and remix your dough for maximum “wow” factor. You’ll also learn simple tricks to layer flavor and avoid sameness, plus get plenty of time to ask all your cookie questions.
Tammy Brennan owns Tammy’s Cookie Company in Vancouver, Washington. She is a self-taught baker who specializes in artisanal bakery-style cookies. Tammy creates her own recipes and is known for her signature browned butter cookie dough. She also makes her own fillings and toppings for her cookies.

Tammy has recently developed a fast-growing Instagram account. Her passion for the science behind baking has established her as one of the go-to cookie experts on social media.

Stephanie is a self-taught baker and the owner of PetiteCakesAndSweets, a home-based bakery in Central Florida known for custom cakes and treat boxes. She learned to bake from scratch alongside her grandmother and passed that passion on to her own family, eventually turning it into a business. After her cake clients began requesting chocolate treats, Stephanie focused on mastering cake pops and chocolate work, quickly making treat boxes a signature offering.

Now, more than eleven years later, treat boxes are the most requested item on her menu. She has also taught students from across the country who travel to Florida to learn her custom treat techniques. For Stephanie, a treat box is not just about the sweets inside. It is about the thoughtful design, the creative touches, and the joy it brings to the person receiving it.
