The Bake Fest is an online event that will be held from 8:30 AM to 8:00 PM CDT (GMT-5) on 21 May 2022 and 22 May 2022. We realize that based on your time zone you may not be able to attend the entire event. Your ticket includes event recordings available for one year after the event so that you’ll be able to catch up on anything you miss.

MORE HANDS-ON: We heard you! You want more hands-on baking sessions and we are delivering. Our plan is to have as many hands-on sessions as possible. For those sessions, you will receive a supply list at least two weeks prior to the event and you’ll be able to follow along with the instructor.

Learn the basics of cake structure and let’s build a cake structure together! We’ll talk about tools, techniques and materials that Liz uses to take a cake from average to AMAZING! You’ll get a materials list ahead of time so we can build a sunflower cake together! You’ll learn how to manipulate structure materials, learn which materials are best for what, how to prep your structure for cake, and the best way to travel with your structure.

Cookie Portraits (Hands-On)

In this hands on session, ChefMitchie will be teaching us how to create a delightfully fun cookie using isomalt and other edible mediums. We’ll also learn several techniques and tips, including:

  • Proper handling of hot sugar, how to pour, and what molds can be used.
  • We’ll get the knack on using trendy tools and how to hand detail.
  • How to use edible color to highlight our project three different ways: dry brush, making your own edible paint, and how to use piping gel.

Using Ratios in Baking

Remembering recipes can be a challenge if you are trying to memorize individual volume amounts of each ingredient. A better way is through ratios. In this session, we will go over the benefits of weighing your ingredients, working with baker’s percentages and expressing recipes in terms of the ratio of ingredients to each other, how to manipulate the ratio of ingredients to one another in certain recipes to get different results (e.g. meringue and ganache), and more.

How to Temper Chocolate and Make Chocolate Bars (Hands-On)

Learn how to easily temper chocolate in your home kitchen and use it to make some delicious snacking bars! Tempering chocolate is a base skill for many chocolatiers, but it does take some time and practice to learn and understand. It helps make the artisan chocolate jewels you see in chocolate shops shiny and gives chocolate that ‘snap’ when you take a bite!

 

In this session Liane will also show you how to temper colored cocoa butter, along with a few easy decorating techniques to bring color to your chocolate bars. She’ll also be showing you how to easily temper small amounts of a few different chocolates, to create some amazing bar combinations using dried fruits, cookies, and more!

Advanced Cookie Decorating (Hands-On)

In this hands-on class, Julia shows how to add luxurious depth and detail to springtime cookie designs using relatively quick techniques such as rubber-stamping, airbrushing, and stenciling. She’ll also cover fondant appliqués, royal icing roses, dusting with compressed petal dusts, beadwork borders, and modeling chocolate ribbons and bows.
